Recipe

Mango & Pineapple Salsa

Ingredients

- 125g Sunshine Delights Mango (soaked for 2 hours in warm water)

- 125g chopped pineapple

- 60g diced sweet red pepper

- 1 plum tomato, seeded and chopped

- 3 tbsp chopped coriander

- 2 spring onions, sliced

- 2 tbsp lime juice

- 1 jalapeños finely chopped

- Tortillas

Recipe:

Remove mango slices from the bowl of water and pat dry. Combine all other ingredients (except Tortilla chips) in a bowl and refrigerate for 1 hour. Serve with creme fraiche (or vegan alternative) guacamole and tortilla chips.
